Hi /ck/. I wish to add fish as a weekly staple to my diet. I never really liked fish but I know it's protein rich and healthy, something I need if I want to continue slimming down. What are some good and easy fish I can cook without much trouble, and isn't an acquired taste? Any dishes you enjoy?

eat some sea bass (google translated, pic related), one of the most anonimous fishes around
crush some cherry tomatoes inside/around it, some herbs, salt and oil inside the belly and throw in the oven, somewhere around 15-20 minutes
nothing special but it's a start, buy the smaller ones for easier cooking (big ones are more tricky to cook evenly in oven)

Salmon and trout. Season them with cajun seasoning, then you put olive oil in a pan on medium high heat and pan fry them until they're done. I mix mayo with sriracha to use as a topping. I serve with asparagus usually.

Salmon is the best in my opinion. Dover sole is also delicious in seasoned bread crumbs and pan fried in butter with lemon and capers (basically a beurre blanc). There are a lot of recipes that follow that technique out there with plenty of varitions (e.g lemon or lavender which are both great with the salmon too).

As far as other sauces go, tartar is delicious.

Try different forms of salmon. Jerky, smoked, sashimi, grilled, poached, etc. Very different tastes. With a proper sauce it can be drastically different too. Good luck

Blackening is a cooking method invented by Paul Prudhomme. Originally it was for redfish but it works with most any fish. However, most people end up doing a bastardized home version.

In the real recipe you season a fish fillet with a herb blend and then coat with melted butter. A cast iron pan is heated up so hot that it is literally red hot and then the fish goes in. The pan is so hot that the fish never actually touches it-rather it floats above the surface due to the liedenfrost effect. The result is a perfectly tender fillet with a nice herb crust. But this takes a very powerful burner and generates a lot of smoke so you can't do it indoors.

The more common version is just seasoning the fish with "blackening spice" (you can buy at the supermarket) and then pan-frying it in oil or butter.

Dover sole is delicious and cooking with butter is a good thing. Don't use overly powerful flavors with fish because it will overpower the taste. Fish are delicate and need to be seasoned and cooked delicately. Undercooking certain fishes is perfectly OK. For instance if you have a nice piece of salmon fillet you can cook it medium as you would a steak leaving it a bit pink/underdone n the center. It will be succulent and easily flake apart, many chefs such as Jacques Pepin do this.

Monkfish is basically a meme but worth trying once. Halibut is better though and cheaper.

Avocado goes well with salmon. No need to fucking blacken it however.

I grew up in a fishing hamlet so I naturally a lot of fresh fish. I'm convinced a lot of city dwellers who say they don't like fish simply never had a fresh one. Go to a fishmonger or even a local fisherman and get something that's still moving.
Fish is easy and quick to cook too. Boil or steam some cod or plaice for a few minutes and have them with some new potatoes and, I don't know, a white mother sauce with some chopped parsley maybe? Melted butter?
Breaded and fried fillets of those two are great as well.
Or grind up some cod with an onion and form them into egg-sized spheroids. Fry in plenty of fat. No, they won't absorb a lot of it.

Those are my main local fish. It obviously varies. We get dover sole too and I like that just fine, but it's generally just a lesser plaice, and a bit more of a hassle to fillet if you're doing that yourself.
Others already said trout or salmon wrapped in foil or with a salt crust. Takes longer but it's still easy and delicious.
