I made my own garlic paste - can't buy in shops around here. Pressed a bunch of cloves, mixed with oil, salt, vinegar. Put in a jar, jar in fridge. Adding a teaspoon of it instead of a clove whenever recipe requires.

btw. skip the vinegar. Preserves well, but gives garlic the weirdest saturated blue-green coloration. I was totally WTF when I saw it.
