If they're fresh and cleaned, they're like eating a properly boiled lobster (tender) and if its not enough seasoning or spicy for you, just dip it it into the leftover "sauce" that it was cooked in (cajun flavors as a base), seasoning salt, or the salt, pepper, lime combo.
When I say sauce, I think that's more of a restaurant+west coast thing though cause regular family boils usually just pour out the broth and dump the pot of stuff onto a table...
And then it can be thickened with more seasoning, garlic, butter, spices, lemon, and what not. Or you can just make a sauce without the broth, that's fine too.

I'm going to teach you all a psychology lesson: the reason the Crawfish is tasty is not the quality of the food, or even the flavor. Crawfish are tasty because you have to work to get them.
