Havarti is nice, especially dill havarti. At least on sandwiches. For a cheese tray, not so much. My all-time favorite cheese is Stilton. It's one of those cheeses that's perfect in every aspect and characteristic of cheese.
For traditional sandwiches, I like jarlsberg, pepper jack, and aged cheddar.

the boar's head smoked gouda is actually a blend of cheddar and gouda which makes it a processed cheese by American standards. it's a decent cheese but the real gouda they sell is fucking delicious, I prefer it to the smoked stuff.
