Whew. It's been a long day. Just got out of the office and I've been thinking about making this thread most of the day.

Anyway. So I like to make soups and stews on occasion and recently have been wondering if I can use uncooked bacon in a soup or stew?

Sorry for the long post etc..

I wouldn't, just cook it in a skillet alongside then crumble it into the soup. Even if it did cook fully in the soup it would be soggy and all the grease would be in your soup.

Here's the deal, dude. Cook the bacon in the pot you're going to make the soup in. Remove the bacon, then saute your vegetables, sear any other meat, and make any roux you're going to use with the bacon fat. Add the crumbled bacon back in later so you don't waste it.

You can always skim off excess at the end, but there's nothing wrong with some fat in your soup

It doesn't matter how much you add because you can always skim it off at the end, or just do it the next day after sitting in a fridge overnight.
