it is a term that simplifies the principle of following trends of what customers are buying and what they aren't, and then adjusting your products accordingly.
Also, being a chef at a restaurant and running all stations at points in my career, there is a good reason why we don't like people ordering less than what is on the set by as much as a side.
1. if you don't understand what exactly you're getting you might leave a bad review on a meme site like yelp
Many people get on yelp after doing what you're doing and say "I ordered something I thought would be YUUUGE but it wasn't enough for the 30$ price tag the meal came with". Yelp reviews influence a lot of the irregular traffic to the restaurant and owners/investors don't like it when they get swayed in a negative direction, whether it is the customer's fault or the chef's fault. In fact, it is always the chef's/the cooks working under him's fault.
2.Cooks get confused if the servers can't order the tickets correctly/the POS is set up in a way that the servers can't order it in the way you want
Pretty self explanitory. Ancient POS systems won't let you do very specific things without typing it in detail and during a rush where one of 3 servers who has 10 tables at once it isn't feasible so they get lazy and assume the cook might interperet the ticket the way the server orders it. Leads to making too many of one side dish which leads to food waste in the end
