I can get fresh farmed salmon from South America for about $4/lb, retail $6 or $7. If they're buying it gutted or H&G and cutting in the back, they're paying a little less even with loss from cutting if they're any good, if they're buying it frozen (probably, even though it isn't required for farmed), they're paying a little less, and if they go through enough that they can buy a pallet or two at a time from first-party suppliers (probably not but maybe) they're paying a lot less.
Don't know the numbers on escolar, really, but you've already found out why none of the places I've been have ever carried it.

$22-$25 AYCE... most people are normally eating rolls and shit, so they're packed with rice. Plenty of people order up some miso soup, edamame, maybe some cheap fried appetizer. Bam, they're already pretty full. Assuming you've got one fat fuck who is eating a whole bunch, you've probably got 3-4 other guys/girls who are going to eat two rolls a piece or something, and plenty who are finicky as shit, so they're ordering the low cost California Roll based stuff.

Considering you'd be charging about $11 a roll for what they're ordering anyways, you're losing at worst a few bucks from the additional extra roll or sashimi they're eating. But again, odds are the rest of the table is eating less, and not everyone came there to just fucking crush it for 5 hours.

Add in the purchase of alcohol, and you're making good money on the whole thing.

Yep, escolar has an amazing texture because of the fat content. I've eaten it tons of times and never noticed any problems. Obviously eating over a Lb. Makes the difference. Most online references say stick to under 6 oz. And you will be fine. That's pretty easy in most sushi places

There's a very nice Serbian restaurant in DC called Ambar that advertises very clearly at the top of their menu that they have an all you can eat option.
