I was going to make roast beef, but then I realized it was getting late and I didn't have the bread for the sandwiches, so I'm just gonna buy the roast early in the morning and cook it then so the french loafs I get in the won't be stale.

boneless tenderloins diced up p small cooked on medium heat. fully cooked in about 10 mins. season w adobo, paprika, and black pepper. the b pepper is redundant as adobo already has it but i love the shit

I gave it maybe 20-30 minutes at very high heat in the oven to start it off and then turned it down to about 150 degrees C for 2½-3 hours.
You can give it a little less time if you want it very pink I guess. I prefer it to have just a hint of pink in the middle myself because I feel that works better on bread the day after, wish a little horseradish.
It was still tender and juicy.

Or did you mean the actual prep before putting it in the oven? That's just a few minutes. If there's fat on it you score it lightly.
Then you stab some fairly shallow holes in it, just large enough on each side to fit a sliver of garlic and make some herbs, and stuff some goodness in them.
Slices of garlic, a leaf or two of mint, little twig of rosemary... I put a cracked juniper berry in some of the holes and that worked very nicely.
Rub the whole thing in oil and give it a generous helping of salt and pepper.
Some people baste the leg once in a while when it's in the oven but this one didn't seem to need it.

Wish people would post some food in these threads instead of just Touhous.

I was so happy with the leg of lamb I made last week that I went and bought another one.
This one I deboned and cut into chunks. I used some chunks for a stew today and froze the rest.
Made a bit of stock on the bones of the last one and added that. Kept the raw bones from the new ones for the dog.
Browned the lamb with a little smoked pig's lard and then added a couple CHOPped onions and a crapload of chopped mushrooms. Brown champignon and portobello, because that's what I had.
A couple carrots and potatoes mostly as filler.
Spice- and herbwise it was primarily garlic but also a little bit of ginger, couple juniper berries, bayleaf, rosemary, tarragon... black pepper and pink salt. Also a generous splash of sherry, which is new for me but I like the result so I'll be using it more in the future I suppose.
Apart of the stock, and I reduced it a lot since it was only from two bones, I did not add any liquid. There's a lot in the mushrooms.
