Coffee and tea are products of solid-liquid extractions.

Your body is addicted to the caffeine (and depending on what kind of degenerate you are, the sugar and fat) and the rest is flavor likely from (in the case of tea) fruit esters or acidic compounds.

One thing to note is that the roasting process in coffee likely introduces products of the milliard reaction (brown parts of pancakes and caramelized onions) which are typically pleasant. Tea probably wont have much of these unless it's roasted.

But this is just the comment of some anon, consider googling some of these terms yourself. I can't be assed to provide references atm.
