Mint chip and the caramels I can vouch for. They don't even taste that 'off'.

It probably tastes okay, but when I read the ingredients it's almost 10% fiber, so they're just adding indigestible fiber to lower the calories. The sweeteners are also indigestible sugar substitutes and some people think they can cause problems with your gut flora. Probably whipping a lot of air into it to make it lighter too. I'd rather eat a smaller amount of better ice cream.
