I too am partial to my local barbecue. It's Santa Maria Style barbecue. Tri-tip was literally invented here. The meat is usually aged, then you put salt, pepper, and garlic salt on it, and cook it over an open red oak flame. It's served with a mild salsa (no sauce, even on ribs), garlic bread, and pinquito beans. The restaurants that serve it also serve crackers, butter, and salsa as an appetizer, as well as a relish tray with vegetables. It's so fucking good, and doesn't just taste like sugar, like most barbecue.

Yep, it's not all it's cracked up to be. This state is lacking so far behind in everything possible that our barbecue can hardly make up for a single thing. We're more of a breakfast state, like, tiny, locally owned diners. Sometimes they're barbecue.

I live in Arkansas and have tried Texas and Memphis BBQ. Probably not that big of a surprise that I prefer Arkansas BBQ since it's what I know best.

I like them collard greens and cornbread you get with the barbecue down here. It's more homely than beans and slaw. I ain't hatin' though, I do like me some beans and slaw.

We tend to go heavy on the vinegar and spice in our BBQ sauce. I'm not that big a fan of the thick, sweet mollasses BBQ. That stuff belongs on porks ribs and chicken quarters and that's it.

I smoke ribs, pork necks, and ham hocks every summer in my smoker. I make up a big pot of collard greens and we eat on it for days.

I love church bbq time of year. The air smells smoky, see all your friends and neighbors at the church you haven't seen in a while. Head on over to the other church, compare all the different bbqs. Church bbq twice a year! Sandwich or plate, coleslaw, beans, a cake and a beverage. Mm mm! My dad brought home 30 sandwiches once and mom put them in the deep freezer kek. Sandwiches err day!

Some churches leave more fat, other churches use different wood chips.
