Hell yeah, nice going with the tuna. And I hear ya, always good to be expanding your skills. My brother and his wife are Korean so, I've learned a ton from her over the years and as I've delved into Japanese cooking, it's made me realize how much more subtle and delicate most Japanese cuisine is by comparison. Much less heavy handed. Regardless, seeing how methods differ culturally between popular ingredients used in both cuisines is a lot of fun.
