In the same position kind of. Last 2 weeks have been pretty lean compared to my usual eating habits. Used to spending $250-$300 a week (including booze). Got about $150 coming to last me a month so I'm planning my menu now.
For the last 2 weeks though, I bought some supplies to get me through.
A bag of pinto beans
A bag of rice
Flour tortillas
Popcorn
I already had a few ingredients like soy sauce, 4 eggs, oil, spices, frozen peas, 1 onion, so I guess I had a one-up on you. Oh yeah, I had some chicken thighs too. I've been eating mostly the same shit every day (beans and rice) but have been able to serve it a bit differently to trick myself.
Refried beans and rice - I make the beans soupy
Fried rice - rice, egg, soy, peas
Burritos - rice, beans, chicken
Steamed rice - rice, fried egg, soy
Popped corn - extra oil in place of butter
If I were you, I'd go with the egg fried rice and maybe the refried beans if you have fat and spices. I cleaned the fat off the chicken thighs and rendered it out for the beans. Even just canola oil will help richen it up.
Pic related, old Sunday gravy walkthrough I did in less lean times.

P.S.
Sunday gravy would have been my 'signature' dish. Braciole (beef flank and pork loin), meat balls with beef, pork, and veal.
