Culinary school is for those without a good foundation. If you feel confidant in your ability to make the mother sauces, just find a good chef who's willing to learn. Passion for the industry isa must, or you won't make it, Be prepared to get yelled at and treated like shit. If you know basic baking theory, understand what makes a good stock, what the mother sauces are, and have a basic understanding of knife skills then you're pretty much on par with me.

Go for crepes. Hide splooge in a bit of cottage cheese, eat lots of pineapples prior to hide the taste.

Toss in oil(Or melted/clarified butter for caramelization and flavour.) and whatever seasoning you'd like. Lay out evenly on a baking tray and roast them in the oven at 375-425. If I'm making roasted redskins, they usually take about 30-35 minutes at 409 to become fork tender. Make sure your vegetables are as uniform in size as possible. If you're roasting peppers for a puree, I like to put them on a rack over a baking pan with a thin layer of water in it. That way it's quicker. Less shrinkage too.

A bit of advice too, invest in an thermometer that you can stick in the oven. That way you get to know the actual temperature of your oven.

How do you guys make quesadillas? More specifically, chicken quesadillas. Don't get into "real mexican" food arguments, I just want a nice simple chicken quesadilla recipe
