dont use thin steaks. one in the pic looks fine but wouldn't go much thinner. Maybe you didn't pat is dry enough or your coals were too far. I like to salt it 4-24 hours in advance, really dries out the surface.

Some flareups like the video and my pic are fine but you have to keep moving the meat or else it will burn.
