Get better beans. Contrary to what hipster coffee shops will try to get you to believe, coffee brewing isn't some esoteric magic shrouded in mystery. You're just flushing solubles compounds out of the bean with water. Bean quality, roast quality and freshness account for the vast majority of the flavor. Brewing accounts for maybe 15%-20% at best. Immersion brewers are easier and more forgiving than pour over. So if you don't want to be assed to do a bunch of fiddly measuring or kettle work then just get something like pic related. Watch James Hoffman's guide and you will be 95% of the way there regarding brewing.

Also don't neglect storage conditions. You lose the ability to get the "taste like it smells" brew in a couple days after you open the beans if you just leave them out on the counter. Every time you open the container and smell that delicious coffee aroma, that's flavor compounds off gassing into the air and not going into your cup. I buy in bulk and store my beans in an airtight container in the freezer and only take out a couple of days worth of beans at a time and store that in an airtight container in the fridge to have as little loss of aromatics as possible. This method can keeps the beans at taste-like-it-smells freshness for months.
