based on what I've seen classically trained french chef's do, I find your take on this accurate. Obscene levels of butter, far more than I'd ever add in my own mash. Maybe the butter is just that good? I could imagine this being the case if you have really nice cultured butters and are trying to showcase them

Guy's a fuckin loon and has very obviously been a high energy chef for far too long. That said, his stuff seems ok enough. I'm not super sure I'm into his béarnaise sauce or bolognese sauce, though. The meat sauce specifically probably tastes fine but I have doubts about it. Bless him regardless, we need more insane chefs reminding you that butter is fucking delicious

I mean I agree that management generally doesn't fuck up shit other than speed, but when they do, it's fucking awful. And yes generally you can generalize a chain by its overall quality, but there are outliers. I must have bad luck because several chains here have horrible management. Not flyover, btw.
