Torn. I still love the natural casing dogs with sauerkraut and mustard I grew up with. But I like the Chicago excess too, except for the stupid neon green relish. Also been to Denmark, and LOVE the dogs there. And have recently developed a weakness for Latino dogs, including the Mexican hot dog torta. So I can't shit on hot dogs in general.

Is that a Coney Dog from the Midwest? I get that as a guilty pleasure. Same with pic related. A lot of the more trashy foods I grew up with I don't eat anymore, and I don't miss one bit. But hot dogs in myriad forms still attract me. Don't know why. Wasn't the biggest fan of them growing up, but they're the one trashy food I still pine for and have to indulge in every now and then.

On a NYC style dog (natural casing, all beef flavored with garlic and paprika) I like sauerkraut and mustard.

On a mystery meat dog I like chili and raw onion, maybe with a little mustard and celery salt.

The super cheap skinless hot dogs are best transformed into pic related.

idk, man. If you're going to get silly with a theme menu hot dogs are a good choice, because so many weird regional variations already exist. You say nonsense I say context. When you understand the history the traditions start to make sense. If you go buy Oscar Meyer level hot dogs from the grocery store ketchup works fine on them. I'd argue chili and raw onion works even better. But these aren't the kind of hot dogs traditionally served in Chicago and NYC. If you're eating a natural casing all beef hot dog flavored with garlic and paprika mustard is a better match. Different styles of hot dogs inspire different treatment. The hot dogs sold by street vendors in Copenhagen bear little resemblance to those used to build crazy Latin American creations. But both make sense. Different cultures have different starting points. Danish hot dogs are smoked pork, and they're topped with the kinds of things a northern culture would eat along with smoked pork. They're treated respectfully because they're actually quality products. Latino hot dogs (salchichas) are mechanically separated meat, often chicken - not a sausage worthy of any particular respect - so they go nuts with shit like wrapping them in bacon and piling on all kinds of crazy toppings. Both are delicious, but they're totally different experiences and totally different sausages.

I'm all about eating what you like, but if you don't know about various traditions you're gonna miss out on some cool shit they've come up with. Even when it comes to something as pedestrian as fucking hot dogs. Pic related.
