I know some people caramelise them pretty quickly, and you certainly can if you watch them like a damn hawk.
I prefer to go really low and slow, though. Three or four hours for a batch of maybe two kilos of raw onions.
You do still have to give them a toss once in a while, but you won't have to constantly stir them until the very end.
Been a while since I had FOS now you bring it up. I'll make some in a couple days I think.

I prefer to go fairly low and slow when I caramelise onions. It's mostly because I'm lazy.
It was about 2½ hours this time.
