Why do vegan alternatives to meat/animal products food always have a name along the lines of "vegan meat/animal product!"

Why do they spell it "pho" if it's pronounced "phuh"? Why do foreign words spelled in English not follow the laws of the English language? It's not even coming from the same alphabet, it's not like there's some historical context that explains why the word needs to be spelled like that in English. Just spell it the way it SOUNDS.
