Alkalizer goes in between the first and second cooks - the second cook is three times longer (1 hour and 30 minutes) than the first cook. The first cook is really just to get the tobacco wet. This step I do with the window open, because it reeks like cat piss (reaction between soda and tobacco produces a lot of ammonia).
