Stab the shit out of the thighs with a fork, then marinate them in:

>Minced garlic
>Chopped White Onion
>Juice of 2 limes
>Juice of 1 orange
>Like a cup of Mexican beer
>Handful of chopped cilantro
>Salt
>Black Pepper
>Cayenne Pepper
>Oregano
>Bay Leaves
>Annatto (PROTIP: you can use Goya sazon (look for 'con achiote') if you can't find a ready source of annatto. It's a seasoning mix that includes cilantro, garlic and some other stuff. It's a Puerto Rican thing but it works fine in Mexican recipes too.)

Separately, remove the seeds from a few ancho chiles, then boil them to complete softness and blend them into their water to form a slurry.

When you're ready to make the chicken, take the thighs out of the bag and brown them in some oil in a big pot. Once browned, add the marinating liquid, the chile slurry and a can of diced tomatoes. Braise until cooked, then shred with a fork and continue to cook until the shredded chicken absorbs the sauce.

>1lb ground beef
>1 half of medium sized purple onion, minced
>1 half bulb of garlic, minced
>1/2 cup Worcestershire sauce
>1tbsp chili flakes
>2 whole eggs, 1 additonal egg yolk
Mix all together thoroughly, form 2 patties, add lots of salt to both sides, pan fry on high heat.

Eat on bun of choice with 1/2in thick slice of onion and romaine lettuce.
