The restaurant industry is pretty carny at the end of the day. Kitchens full of egotistical people high on drugs, food that is designed to be a glib facsimile of the real recipe, and owners who will do anything and everything to gleefully screw over their own workers and especially their own customers.

I think one of the latter stages of becoming a good home cook is realizing the restaurant industry does not "own" food and actually starting to respect them less overall.
