Mine neither. No rise, no oven spring. Tried many recipes, 30 lbs of flour, and spent many hours online (including /ck/). I've switched to bottled spring water, used the oven with the light on for higher rise temps, used a dutch oven, or not, added steam, or not, added gluten, corn starch, switched to smaller loaves, bigger loaves, tried rolls, different levels of hydration, proofing with or without sugar, different kinds of yeast,everything I could possibly try.
The weird part is, my first two loaves of sourdough came out great, the next 20-something? Just bricks.
From here on in, I use flour for breading meat and making gravy. Bread (for me) is a hopeless pipe-dream.

Came to this thread for advice on rising.
First I tried sourdough.
I can only get my starter to rise in the jar if I put it in the oven with the light on. It gets about 85 to 90 in there.
But it just won't rise when I bake a loaf. Tried 3-4 times.
So I try dry active yeast instead.
Let it proof in the oven with the light on, proofs great.
First two loaves work great. Nice open crumb, soft and fluffy. Crust's a little chewy, but otherwise fine.
Next I try to use both sourdough starter (for the flavor) and dry active yeast (so it will actually rise).
This fails three loaves in a row. Tastes great, just doesn't rise, poor crumb.
So forget the sourdough, huh?
Go back to just dry active yeast, next two loaves don't rise. Oh, the dough proofed fine, but the loaves didn't rise when baking.
Trying AGAIN, this time the dough won't even proof, even though I proofed the yeast before mixing into the dough.
I'm using 70% hydration, measuring everything with a scale.

Any ideas?

My bff/roommate has COPD, and is on oxygen 24/7.
He's at a realy high risk of dying if I bring the virus home.
I'm not brain-dead enough to just lie to myself for the rest of my life if I accidentally kill him because I wanted to get my drink on.
