My personal favorites for american chinese food would be

Crab rangoon, deep fried pastries filled with crab cream cheese

General Tso's Chicken, chicken deep fried and covered with a spicy, sweet sauce

Hot and sour soup, tons of shit, I don't know exactly what all is in it but it's good.

Main course dishes typically have meat with really terrible texture (in my opinion), so I stay away from those.
