Are you using a mixer or a whisk?

I find I get better results with a whisk and I always add a little more flour than the recipe asks for for a little more manageable consistency.

They say that letting it sit for half an hour in the fridge is good too, I find it separates the mixture from any bubbles and stir it back in with a wooden spoon. If you don't have time just add some flour and hand whisk.
