Threadly reminder that what distinguishes a reddit "collector" from a Chad Hot Sauce Enjoyer are the seals on the bottles. I have quite the Sauce Vault myself (tips fedora) but all of the bottles are in various stages of consumption (oxidation). And no, I don't buy dupes to keep NIB in my sauce humidor... unless by "sauce humidor" you mean by gigantic obese asshole.

It became a mild hipster thing because it was the default cheap table sauce at "alternative" Asian restaurants (Viet/Thai) in urban areas. Eventually marketers seized on it and suddenly "sriracha" was everywhere, just like "black angus beef" or the current ridiculous "wagyu" fetish. So naturally hipsters like you had to move on to something else. There's nothing amazing about sriracha. But there's nothing wrong with it either, it's just a relatively mild all-purpose chili sauce, thicker than Tabasco (so better for wings, etc), and a more interesting flavor than Frank's. Also Huy Fong Sriracha is an American company which should be worth something.

No, he's not wrong. There are a lot of nice suggestions in this thread but fuck the gatekeeping, my first homemade sauce was home-grown jalapenos and serranos with the stems cut off, whole otherwise, pureed in a blender with white vinegar and salt, and that was it. And it was delicious. (The only "issue" was that it was pretty thick because I didn't want to add too much vinegar, but even a lot of popular sauces are quite vinegary.) You can move on to more advanced techniques from there, but why discourage people when "peppers, vinegar, salt" really are the basic ingredients.

If you really don't know, the meme's basis is Redditors who started "collecting" hot sauce like Funkopop dolls, and of course posting staged photos for internet points. Pic related. (A key distinction, which a lot of people miss, is that most of those bottles are clearly unopened. Having a dozen sauces in your pantry, even "artisanal" sauces ordered online, is not cringe if you actually use them.)
