Whole lot of soups that are really good, at the start if spring nettle soup is something a bit different but tasty it was actually used as a medicine in medieval times but then again it's not really something one might think of during the day like ooh I got cravings for nettle soup but something that is really awesome is rose hip soup which you usually have as a meal between lunch and dinner or perhaps breakfast during a weekend either cold or heated with small almond macarons addes and often a bit of vanilla icecream, can highly recommend.

Dill is mainly used during summer like for example some dishes at midsummer smorgasbord ans yes there are some dishes that use dill but not as much as you might think and mainly with fish.
