My homemade tobaso was very "green" tasting, it did have good flavor but was just overall vinegary and tasted like Crystal hotsauce.

I bought a few hot sauce books and a fermentation book, anyone have any pointers on fermenting a good sauce?

here is some tobasco I made last summer, 100 or so tobasco peppers blended with 3/4 cup white vinegar, 5 cloves of garlic, 1 whole onion and 1 lime. the PH is roughly 4.6 a year later, and the taste is as good as the day I made it.

shit is gooooood btw...
