It involves weaving very delicate strands of pasta into thin sheets. It's done by hand, and is the kind of thing that takes time and experience. It's really only produced by one woman these days, so it'll probably be lost soon.

I'm debating traveling to Italy. I want to eat su filindeu.
Is this a good idea, or a dumb idiot idea? I know it won't actually be terribly different than other pasta. I don't know, I can't shake wanting to eat it.
