>in separate pan, add butter and oil, bring up to temp
>when pan is hot, add beaten eggs with salt and pepper
>let omelet cook, pulling up the edges of the omelet with a spatula and letting uncooked egg slide underneath
>when omelet is a minute from being cooked, add a touch of 35% cream and continue to pull up edges
>slide omelet out of pan onto plate, add your filling ingredients, and fold over
>alternatively, add filling ingredients while omelet is still in pan, fold over, then slide onto plate
