Poorly done m8, not rolled tight enough and/or not wrapped in a second layer after poaching. The place I work did torchon dishes a few times and one guy got absolutely ripped to shreds because his turned out looking like that.

Don't get me wrong, it's still fucking delicious, just wasn't up to the level they wanted. Pic related is more what they expected from us.
