Neat.

Pic related is a low country boil. Low country, or lowcountry, is the coast line of South Carolina and Georgia. It's full of warm water ocean seafood and it's pretty tasty. I grew up in the Pacific Northwest, so I'm used to seafood, but living down here has been fun. We have something similar to a boil up in the PNW, but this is about the LCB.

Fresh ingredients are key, so you want stuff that you've just pulled out of the ground and the ocean, except the sausage obvs. Ingredients are simple: ear sweet corn cut into thirds or quarters, baby potatoes, shrimp, crab, and sausage. Herbs, aromatics, and seasonings to taste. You put all that into one giant pot and boil it in stages. Pull it out, dust it with your seasonings, let the juice and seasonings drain out and become a jus. Then you find a big picnic table outside, spread a bunch of newspapers down and dump everything out on the table.

Get a bunch of friends and family around it and everyone shares the food, drinks, and just hands out. It's tasty and social. One of my favorite food related experiences.
