this is one of the worst pieces of advice i've seen on the internet. even if i was being generous and i assumed it excludes baking and interpreted it as meaning "cooking is accessible to anyone, don't be intimidated, just try it", it's still horrible advice.
imagine you told an anon to make a stew or soup because "that's the easiest". they'd just chuck some shit in boiling water, throw in random seasonings and call it a day right? after all that's what a stew/soup is right? but that's not true is it? a stew recipe will include browning meat in oil, then removing it and frying up vegetables. and then the liquid won't be water, it'll be alcohol and/or some meat stock right? and maybe you'll need flour or corn starch for thickening too, won't you? and a soup recipe will include mirepoix and possibly stock won't it? how's a guy new to cooking supposed to know that without following a couple of recipes and learning how ingredients work together?
doing your own thing will only lead to good results if you have some basic knowledge on how cooking works. you have to know about how temperatures affect ingredients and cooking vessels, you have to know some uses of the ingredients at your disposal.

and if i'm NOT being generous, i'll just say this aversion to following recipes will close you off from ever experiencing some of the finest dishes and ingredients, created through centuries of innovation. can you arrive at coq au vin on your own? beef stroganoff? bechamel sauce? carbonara?

i know a guy who "does his own thing" and doesn't follow any recipes. he boils spaghetti in one pot, broccoli in another, puts them together on the same plate, mixes them around and adds salt and olive oil. that's what cooking on instinct gets you. he enjoys it though, so mission accomplished right? he's a cook!
