iirc, for the first year they were restricted to just brewing their blonde. But even among trappist ales, theirs are pretty unusual. Their quadrupel doesn't use any of the usual spices and instead achieves the effect with just malts. On top of the stout, which is fantastic, their IPA (the only trappist IPA produced as far as I know) is really balanced and their christmas ale is decadent.
