I regularly eat raw eggs in Germany and never had issues. Because both Japan and Europe have decent food laws. In Europe eggs will have one consume-before date and one (shorter) keep-in-fridge-after date. Go back 28 days from the long date and you have the day the hen shit it out. If your egg is less than 10 days old it should be safe. Look for an intact Chaliza, thick egg-white, and the egg should sink to bottom in water. No smell whatsoever.

It's all abut how evenly the energy should be transferred. Short on high heat makes a crisp bottom with a runny on top. Sustained low heat creates the same with exception that the bottom is not crisp. Depends on your preference, I prefer low heat, non-crisp.
