Katsu is the cutlet, katsudon is a specific rice bowl dish with katsu, egg, and onion.
For me it's okonomiyaki, which obviously can contain seafood but the very basic version wouldn't have seafood. I prefer it with just the pork. Hiroshima style is slightly better in my view but I'm happy to eat Osaka style as well.

I'd really like to open up an okonomiyaki shop. I think offering the standard topping choices, Osaka and Hiroshima styles, and then a few meme hipster bullshit options.
I think it could really be a hit in the US. And it's so delicious.
I guess it'd be easiest as a food truck, but I went to a shop in Kyoto that had rows of two person tables with a griddle in each table, and that seemed like so much fun.

Okonomiyaki from a famous Osaka chain. I stupidly took a trip during the new year, so almost everything was closed which left me a lot of time to hunt for restaurants.

Okonomiyaki. Osaka and Hiroshima styles with traditional ingredients, cheese-filled which I had in Kyoto, and then a few fusion styles like Italian /Mediterranean / Indian inspired.
