The truth is that carbs aren't inherently bad. The problem with both the adherents and the detractors of keto is that they think its the "one true diet", and treat it accordingly. The truth is that it exists to be a solution to a very specific problem: diabetes or pre-diabetes and the obesity and other problems that come with it. Diabetics lose insulin sensitivity. This causes hightened insulin responses to food that goes on for longer. Having insulin in your blood prevents access to body fat. Restricting carbs and to a lesser extent protein gets you to a point where you can metabolize body fat and eventually regain insulin sensitivity. That's it. If you have a healty metabolism you don't need to worry about carbs, if you don't restricting them could be a solution. For some reason diets are more controversial than religion in the modern world and people can't wait to start tribal wars over them.

What the anti-keto spergs don't understand is that overweight people by and large have a broken insulin reaction, and that insulin blocks fat burning. When overweight people eat carbs they produce way more insulin than healthy people and it takes way longer for that insulin to leave. This means that even when someone overweight eats a calorie deficit diet they are unable to access their fat storage. Instead their metabolism slows down to compensate for the lack of energy. The reason keto and other low-carb diets work is because they allow you to avoid the insulin spikes and access your stored fat while eating fewer calories than you burn.
It's easy to mess up though because you have to make sure you don't overeat and don't eat too many carbs when you do.

The reason keto works is that if you want to lose fat you have to be in a state where you're burning fat. This means you have to have periods where your insulin is low and you're out of readily available fuel. Limiting carbs removes the insulin spikes and high fat foods make it easier not to overeat compared to high-carb food. The removal of fructose is an added bonus because the way its metabolised leads to more body fat. Is keto magic or the perfect diet for everyone? No. Can it be a useful tool for some to lose weight? Yes.
