I made one a while ago with pineapple as well. Deseeded all the chillis. Let it go for 4 weeks. It's really cool how funky it gets

deseeded them all and feremented them with fresh pineapple for a month
i don't have a photo but it's really cool what happens it goes all bubbly and wierd

hey op im doing my first fermentation at the moment too.
I think i'm gonna do some sauerkraut next as well like you or maybe kimchi
It's one day in and it's started to get little bubbles.
It's just chillis i grew and pineapple and a bit of garlic and some pink and black peppercorns
In a brine of 3 cups water and 3 tsp salt and 1 tsp sugar
weighed down under the brine with a ziplock bag full of water
It's summer here, but it doesn't really go above 75ish and i'm keeping it in a cool cupboard.
My plan is to blend it with a bit of the brine and maybe some vinegar to make a sauce

What do you guys think? Around how long should I let it ferment for?
