Businessmen and tech workers of the 70s/80s tended to drink coke as an alternative to coffee. Diet coke was particularly popular before the panic over artificial sugars. The whole meme of fast-paced work and long office hours meant that rather than taking the time to brew up and prepare a coffee, you could just grab a coke from the fridge and be back to your desk in seconds.
Now all those young desk jockeys are old men who spent the last 40+ years of their life drinking coke. They're probably not going to stop just because you don't think it's an age/class-appropriate choice of drink.

It was a popular and trendy "health conscious" substitute for coffee for the longest time in business settings. Instead of taking the time to make coffee, you'd just grab a diet coke from the fridge and get back to work.
When the artificial sweetener scare started, most of these people were too old and set in their ways to change trends. I wouldn't be surprised if the diet soft drink market is held up largely by the 50+ demographic.

Diet Coke was big as a quick and easy coffee replacement for businessmen back in the 80s/90s. A lot of them never bothered kicking the habit.

Bill Gates still eats fast food and drinks diet Coke. It's not an odd conclusion to say that people who get "Bill Gates rich" won't change their habits too much. Rather it's the people who hadn't been eating that shit and constantly moaning about how they couldn't afford "good food" that would change.
