Because it hasn't been butchered properly? If it were blood it would be coagulating. Beef is drained.

Can someone explain the rare meat being better meme? The texture is all mushy and watery, I don't get it.
A few years ago I went to a relatively high end steakhouse downtown and ordered two steaks, one rare and one well done, just to compare. The rare steak was diluted in flavor and was so comically wet that it was like they soaked it in a bucket. The well done steak was firm, had a better texture, and tasted just as good if not better. I had no complaints about the juiciness, it was not dry at all like the noodle armed steak snobs make it out to be.
They were the same cut of beef and of nearly equal size, and I trust that a place charging $35+ for a fucking single slab of meat at least kinda knows how to prepare it. Please enlighten me on how rare steak isn't abject shit. I want to be "cultured" like the rest of you.

reminder if you can't make a flavorful and juicy well done steak you're just a shit cook. there's nothing wrong with any way of preparing steak, from rare to well done, it's all good. you could probably even eat raw steak if it was a good cut.

on the flipside, if you eat burgers with any pink in them you're a fucking moron. steak only has bacteria on the surface which can easily be seared off but ground beef is completely exposed in that regard and needs to be completely thoroughly brown. ordering or preparing your burgers rare just paints you as a trendhopping hipster faggot looking for salmonella.

I think it would probably be underseasoned and would never get a proper sear, therefore the meat would be lacking that good flavour from being cooked in a super hot pan or grill, say you deepfry at 400 degrees farenheit, you will get a weak sear compared to a pan at 700-800 degrees.

in conclusion, it would have less flavour than if you were to cook it any other way, and is probably too difficult to get it to a proper doneness
