No, a roux is just the fat and flour whisked over heat. Add whatever liquid you like (milk, meat drippings, stock, vaginal discharge, etc.) and then it becomes a sauce or gravy.

There's plenty of non-wealthy young Manhattanites still around, my dude. I'm one of them, and nearly all my firends are, too.

That being said, I wasn't around for the big live music scene. I'm an amateur musician myself and yet I still realize how great of a music city NYC is compared to all the other places I've lived, even in 2016. At least the stand up comedy scene is still fucking excellent, the big guys pop in for a few bits and the young guys are keeping things fresh.

I can see where there is a disillusionment with Manhattan though. The city is becoming less centralized than it used to be, and there's a lot of cool things to do in BK and Queens. Most of the cool new-ish musicians I know do their tours in BK instead of the city. However, I did see FlyLo's debut for You're Dead! in Hell's Kitchen 2 years ago and it was sick.
