Can't talk about french food without mentioning this. It's apparently illegal in some parts of the US because helping a duck or a goose along with doing something they'd be doing on their own anyway is animal cruelty whereas keeping mutant chickens stewing in their own feces in little cages somehow isn't. Anyway. This is hard to describe if you've never had it. It's like the smoothest richest paté you've ever had. Call it duck butter.
