french scrambled eggs are pretty good because its less overcooked and has more butter than regular scrambled eggs and also the egg granules are broken up a lot smoother since you're stirring it constantly over a double boiler. If you cook it by sous vide and then blend it, you'll have an even smoother slightly chunky egg custard scrambled eggs. Scrambled eggs are also a great treat for getting rid of any extra yolks quickly.
