keep it in a brine for a day before
slice in half and remove the innermost membrane
get your pan fukken hot lad, and add a little frying oil
give it a little time on each side (just till you see some fair colouration)
add a little ginger, thyme, and sherry vinegre and take off the heat, then when it's 'settled' a little butter, and baste them kidneys
season with black pepper and enjoy

holy fuck these are good
you peel the membrane then cook very gently (bring a large pot with herbs, salt, and a little vinegar up to the boil, turn off, and add brains on the side, then remove in about 10m)
serve with some good toasted bread and something sharp - tomato, raw onion, and lovage is a great combo

the leaves are fresh/somewhat ethereal and cleansing tastewise; quite unique
the seeds are like a zesty musk, a little nutty
they are somewhat similar, and work phenomenally well together (cook the seeds into a curry paste and garnish with chopped leaves)

Slice cubes and leave them out to dry a little; just enough to hold their form
Melt butter with some smashed garlic cloves till it foams, then toss in the bread and some chopped sage leaves
Keep frying on a healthy heat till browned then season, pat dry and keep in a dry place, sealed
