I learned that the hard way by buying batches of chile peppers, I've found that it's best to freeze them asap. I just bag them in large ziplock bags and put them in the freezer for later. I usually have to do that because the window for chili peppers is sort of narrow so I buy bunches of the ones that I like so the only way to preserve them is to freese them.
