Beeeeeeeaaaaaaans! Dry beans.

Dry beans are cheap. A ham hock is cheap. Those chicken bones you've been saving (haven't you?) are cheap. Mirepoix is cheap. Dry herbs are cheap (per serving). Beans! Beans stretch a little bit of meat to the moon. Beans are nutritious and filling. Beans make you gassy, and everybody enjoys flatus. Pinto beans. Lima beans. Great northern beans. There are all different kinds of beans!

Serve them with rice! Rice is cheap.

Also, does anyone have tips on how to cook dry beans from the store?

I buy dried beans from the store and try to cook them in a soup. No matter if I soak them the night before, or boil the beans first, they are always hard/crunchy/and under cooked in the soup.

I added sodium bicarbonate one time, out of desperation, the beans turned out great but I noticed the broth I cooked them became very dark almost black.

Can anyone help me with the dried beans? Is this just the way it goes when using dried beans?
