Do you thaw? I figure this must be part of the trick since cooking while its frozen is just gonna steam it all and turn it to mush, but a slow thaw at room temp doesnt seem any better. Might mess around with doing a quick thaw in the microwave then cooking briefly at higher heat, but i can always tell they arent fresh no matter what i try.
