my favorite thing is re-fried fatty meat with sugar, soy sauce, rice wine, garlic, spring onion, sesame oil, chilli oil, and sesame seeds

Pork or lamb shoulder or belly or the scrappy bits off a roast chicken or something.

Refrying meat is much easier than cooking anything from scratch.

the easiest thing to practice proper stir-fry with wok-hei is refrying a small quantity of leftover already cooked fatty or rare-ish meat.

>add oil
>add meat
>toss

pork shoulder cut into strips and marinaded 3 days in fermented red bean curd etc
roasted and glazed with honey

this was mostly the fatty pieces
fried with garlic, spring onion, chilli oil, sesame oil, shaoxiang wine soy, sugar, and toasted sesame seeds
on rice
