Half of it is a social thing. You eat stupidly spicy wings with a friend because it's fun to go through something exciting like that together and commenting on it, or seeing who can endure the most. Novelty spicy sauces are also sometimes actually good in addition which is a pleasant but unnecessary addition. When someone eats a wing, starts crying and snotting, and tells you it's good, that's supposed to be their way of comforting you into the idea of joining them. They're not pretending it's preferable as a casual meal they might eat alone.
Novelty spicy has its place in social events, but you people didn't notice because nobody ever wants to hang out with you through such a bonding activity.
